Add libgallium to exclude list

Hi, I was interested in adding libgallium to the exclude list. Since pkg2appimage seems to be the preferred place for excluding files packaged by the linuxdeploy tool, I'm seeking some assistance.

I was going to submit a PR to do this, however, the file pattern is OS-versioned and is guaranteed to change over time.

• Is this the right repo for this?
• Is there a way to provide this exclusion in a platform-independent manner?

The file was bundled after using linuxdeploy + GitHub actions with Ubuntu 24.04. If this is the wrong repository for such a question, please let me know where better to ask.
