[docs] Cut version 0.87 - #5206

Snapshot `docs/` as `versioned_docs/version-0.87` via `yarn version:cut 0.87`, and publish it as the new latest version now that 0.87 is released. **Changes** - Add `versioned_docs/version-0.87` and `version-0.87-sidebars.json` (241 files, verbatim copy of `docs/`). - Add `0.87` to `versions.json`, making it the last (default) version. - Repoint the latest-version Vercel redirect to `/docs/0.87/:path*` (via `yarn sync-redirects:vercel`). - Update the releases table: 0.87 to Active with its blog post, 0.85 to End of Cycle, 0.84 to Unsupported.
